Chili Garlic Noodles (Quick, Easy, Few Ingredients! AND Vegan!)
I am a huge fan of quick dinners that can be made after a long day. This recipe for chili garlic noodles from Natasha at Salt & Lavender is a recipe that you need in your repertoire of quick things to make. It is a very simple dish that can be made in 15 minutes! The best part about it is that it is delicious! I did make a few changes to the original recipe, but I will include the link down below (the original one is just as delicious--I just like more options).
Chili Garlic Noodles
Ingredients:
Noodles
~7 ounces of soba noodles
Sauce
1 tbsp olive oil
1 tbsp soy sauce
2-3 tbsp sriracha
2 tbsp hoisin sauce
2 tbsp lime juice (about ½ lime)
3-4 garlic cloves
⅛ red pepper flakes
Garnish (all optional)
2 tbsp chopped peanuts
2 tbsp chopped cilantro
1 scallion
Sesame seeds
Lime wedges
Sriracha
Directions:
Mix together all ingredients for the sauce.
Cook the soba noodles per the package directions. It takes about 3-4 minutes in boiling water. Once finished cooking, drain.
Once the soba noodles start cooking, add the sauce to a skillet on medium high heat and cook the sauce for about 2-3 minutes. Stir often.
Add the drained noodles to the sauce and mix to coat the noodles. Remove from heat and garnish with desired toppings.

Notes for next time: I loved how quick this was! This dish is a bit spicy, so if you want something less spicy add only 1 tbsp of sriracha.
