Butternut Squash and Spinach Lasagna (AMAZING lasagna!)

So, let’s talk lasagna. I used to think that lasagna wasn’t worth the hassle, but now I know why lasagna is going to be a staple in my house. This recipe for butternut squash and spinach lasagna was worth all of the hype. Layers of deliciousness stacked on top of one another creates a beautiful lasagna that is worth making and worth sharing.

This lasagna is made from layers of butternut squash filling, spinach filling, and a few other ingredients. The butternut squash filling is made from butternut squash puree that has been blended with ricotta cheese, milk, salt, and nutmeg. The spinach filling is made from fresh spinach that has been cooked down, ricotta cheese, mozzarella cheese, garlic, salt, and pepper. I did add two pinches of red pepper flakes to the spinach mixture. This is all layered between lasagna noodles, more mozzarella cheese, parmesan cheese (I actually omitted the parmesan), italian seasoning (I omitted this), paprika, and basil. I put this all together in a greased 9x13’’ pan in the oven for about an hour.

There are so many reasons why this lasagna is delicious. The butternut squash brings a slight sweetness that is rounded out by the savory ricotta cheese and the cooked spinach. This lasagna has the perfect texture because of the well cooked noodles, the creamy butternut squash filling, and the fullness from the spinach. I cannot get over how incredibly delicious this lasagna was! I will be making it again for sure!

Notes for next time: I think I would make more of the spinach filling and the puree because it was just so delicious!
