Blueberry Pie (Recipe #163)

There are just so many foods that I love in this world. Today, we are going to focus on pie. I only have a few recipes left in the Vegan for Everybody cookbook and this beautiful blueberry pie was one of them. I decided to make it for Christmas and bring it to share with family!

This was a very straightforward recipe that centered around (obviously) blueberries. I sauteed some blueberries. After those blueberries cooled, I added in some shredded apple, sugar, ground tapioca, lemon zest, lemon juice, and salt. I also stirred in some whole blueberries. I put that mixture into a pie crust (also made from the Vegan for Everybody Cookbook). I topped the blueberries with pieces of coconut oil and the second crust. I cut small circles out of the crust and decided to place the cut out circles back onto the dough. I don’t like to waste anything, so I thought it would be a good idea to throw them back onto the dough. I put it in the oven after sprinkling some sugar on top and let it bake until it was golden brown.

The pie was delicious. I really enjoyed everything about it. I liked the addition of the apple and the lemon. Personally, I feel like blueberry and lemon were made for each other. I would recommend this and I would definitely make it again!

Notes for next time: This does make a mess in the oven, so make sure that you use a baking tray underneath it.
