Shiitake Ramen (Recipe #128)
I feel like I start most of these posts by stating how much I love the specific food that the recipe is trying to create. Well, to be honest, I love so many different types of food! I am really just enjoying making all of these different foods at home. I have been learning so much and eating a lot (haha)!
So, back to the topic on hand, the ramen! This shiitake ramen recipe was amazing. I started by creating a broth that simmered for one hour. I sauteed onion and then I added in ginger and garlic. I stirred in some vegetable broth, water, mushroom stems, mirin, kombu, and soy sauce. Once that was done simmering, I strained it through a fine mesh strainer. I whisked in red miso and let that dissolve before adding in sliced mushrooms to the pot to let them warm through. I prepared my garnishes of bean sprouts, scallions, and toasted sesame seeds. The cookbook also suggests using shichimi togarashi as a topping. This is a sesame-orange spice blend and I will post about that separately. I boiled ramen noodles. I placed the prepared noodles in a bowl, I spooned in the broth on top, and I finished the bowl with the garnishes.
The broth was just incredible and full of flavor! I was very happy with how this dish turned out as a whole!

Notes for next time: I loved this! I would omit the bean sprouts because I felt that they were not necessary.
