Pumpkin Cookies (ONLY 3 Ingredients!)
I made pumpkin puree from scratch and I needed to use it in something right away. I got this recipe from my husband’s grandmother. I absolutely love them when she makes them so I just had to try it! They turned out amazing and I know this is going to be a recipe that I return to over and over!
Pumpkin Cookies
Ingredients:
1 15.25oz package spice cake mix (I used butter pecan)
15 oz pumpkin puree
1 cup chocolate chips
Directions:
Combine all ingredients into a bowl. Prepare baking sheets by lining them with parchment paper and greasing them. Using about 1-2 tbsp* of cookie batter, drop them onto the prepared pans.
Place in the oven at 400 degrees Fahrenheit for about 8-10 minutes. The cookies are done when you can touch the top of them and they are firm. Let them cool for about 5 minutes and then remove to a wire rack to finish cooling.
*This will depend on how big you want them. I like using 1 tbsp and it makes about 44.
