Farro Salad with Sugar Snap Peas and White Beans (Recipe #131)
I am turning out to love grain salads. This recipe for farro salad with sugar snap peas and white beans was delicious. It used a grain base and a light dressing to tie everything together.
I started by cooking my farro to package directions. Once the farro was finished cooking, I placed it on a baking sheet to cool. In the meantime, I placed pieces of the snap pea in boiling water for about 2 minutes (enough to keep them crisp, but start to cook). I also put together the dressing by whisking oil, lemon juice, shallot, dijon mustard, salt, and pepper together. I tossed everything together in a bowl and served.
Before I did mix everything together, I tried a few new plating techniques. I have never given much thought to how something is plated. I tried two different ideas, which I included below. I also will show the picture after I mixed everything together. When I was working on plating this dish. It really made me think about the ingredients themselves and the value (or lack of) that each ingredient holds in regards to the whole dish.

Notes for next time: This was a good grain salad! I could see myself adding raisins or date pieces.
