Farro Bowl with Tofu, Mushroom, and Spinach, AND Miso-Ginger Sauce (Recipes #141, #142)

The Vegan for Everybody cookbook has a variety of different bowls. This grain bowl uses farro as the base topped with crispy tofu, sauteed mushrooms and onions, and spinach. The bowl is also drizzled with miso-ginger dressing. There is a recipe for both the bowl and the sauce in the cookbook, but I decided to combine them into one post because I felt the sauce was an extremely important component of the bow.

The bowl was quite simple to put together and it came together quickly. I made sure to prepare all of my veggies and different components before starting to cook each element. I started by putting the farro on the stove to simmer and I pressed the tofu. While I was waiting for those two things, I made my miso-ginger dressing, chopped mushrooms, diced onion, and rinsed my spinach. I coated the tofu in cornstarch and fried it until it was crispy. Then, I sauteed the mushrooms and onion. I finished by adding the spinach to the pan a little bit at a time until it was all wilted. I layered each of the elements in the bowl and topped it with the miso-ginger sauce.

I want to take a second just to address the miso-ginger sauce. This sauce was really amazing. It was creamy and had the perfect combination of flavors. It was a bit savory, a bit sweet. The sauce is made from vegan mayo, red miso, water, maple syrup, sesame oil, sherry vinegar, and fresh grated ginger. Each of the ingredients work well together creating a really incredible sauce. I made this sauce specifically for this bowl, but I can see it working very well with other foods. I can see this being put on a  sandwich/wrap in place of mayo!

Overall, the bowl was delicious with the dressing. I would make this again! I really loved how simple the bowl was and how much flavor was in it. I would also be interested in trying this bowl with a different sauce (maybe a creamy sriracha mayo?).
