Dark Chocolate Cupcakes (Recipe #135)
I love how many options for desserts that the Vegan for Everybody cookbook has! I decided to try the recipe for the dark chocolate cupcakes and I was shocked at how amazing they turned out. The cupcake was moist and delicious!
I started the recipe by combining all of the dry ingredients in a bowl--flour, sugar, baking powder, baking soda, and salt. In a separate bowl, I combined the water, cocoa powder, bittersweet chocolate, coconut oil, and vanilla. I placed the bowl with the water and other ingredients in the microwave for about 2 minutes. I stopped the microwave and stirred it about every 30 seconds. I wanted to ensure that the coconut oil melted. While that was coming together in the microwave, I whipped aquafaba and cream of tartar in a stand mixer until the aquafaba was clinging to the whisk attachment. After I had my three separate bowls prepared, I started combining them. I stirred in the chocolate water mixture into the dry ingredients until incorporated. Then, I mixed in about ⅓ of the aquafaba. Once that was well incorporated, I mixed in the rest of the aquafaba until no white streaks remained. This meant that the batter was ready to be transferred to a prepared cupcake pan. I put them into the oven to bake and let them cool for about 10 minutes in the pan before I removed them.
While the cupcakes were baking in the oven, I prepared the chocolate frosting. I used the same recipe that I used for the cake when I made it. This chocolate frosting turned out better than my first time! I think it was because I used a different brand of coconut milk. I frosted the cupcakes after they cooled completely.
These cupcakes were just amazing. I was so happy with how they turned out! I thought that they were everything that you wanted in a cupcake! I am keeping this recipe!
