Belgian Waffles (Recipe #129)
Sometimes, I just need a classic American style breakfast that excites my morning and fuels my day. This recipe for belgian waffles created an undeniably perfect centerpiece to my weekend brunch! These waffles were the perfect combination of crispy and fluffy!
I started by combining my dry ingredients in one bowl and my wet ingredients in another. For dry ingredients, I used flour, corn starch, sugar, baking powder, baking soda and salt. For wet ingredients, I used almond milk (the recipe called for soy milk), coconut oil that was melted then cooled, lemon juice, and vanilla extract. Once I had all of those ingredients together, I whisked in the wet ingredients to the dry ingredients. I then scooped up some batter and poured it into my preheated waffle iron. I let the waffles cook for about 5 minutes. I did ignore the indicator on the waffle iron as explained by the recipe. This is because the vegan waffles cook slightly differently than regular waffles, so looking at cues from the waffle itself is a better idea.
Of course, I poured lots of maple syrup over my waffles! I think that I would like to add some blueberries into the waffles next time! I do really enjoy fruit or chocolate chips or a combination of the two in my waffles. These waffles are good enough to be the only item at breakfast or you can supplement with your other favorite breakfast foods. If you want an all vegan brunch, add a fruit salad, vegan bacon, or a potato hash. For a non-vegan brunch, you could make eggs, bacon, or hashbrowns. I am going to keep this recipe and I do recommend it to others!

Notes for next time: These were amazing! I would love to add some fruit into the waffles or maybe even (vegan) chocolate chips!
