Almost Hands-Free Mushroom Risotto (Recipe #132)

As you know from my previous post about risotto, I love risotto. This recipe for mushroom risotto is one of the variations of risotto in the Vegan for Everybody cookbook. The only difference between this recipe and the fennel risotto is that this recipe calls for cremini mushrooms and dried porcini mushrooms. I liked the recipe, but I did not love it. I felt that the risotto could have been creamier and more flavorful. I have a go-to recipe for risotto that I have used before this one and that is the one I am going to stick with. I am glad that I tried this one, but I felt it was just a bit lacking for a risotto.

Notes for next time: This was good, but I prefer the mushroom risotto recipe that I have used before.
