Wheat Berry Salad with Chickpeas, Spinach, and Orange (Recipe #104)
Every once and awhile, I like to enjoy a salad. I like green salads from time to time and I also like non-traditional salads with bases of grain. The majority of this salad is wheat berries! Just like the recipe name suggests, this salad had chickpeas, spinach, and orange in it. I enjoyed this salad and would make it again!
This salad was very easy to put together. I started by cooking my wheat berries by the package directions. When they finished cooking, I put them on a plate in a single layer to cool. In the meantime, I prepared the rest of my ingredients. I thinly chopped spinach, thinly sliced red onion, chopped mint, and prepared the oranges. I peeled the oranges, cut them into quarters, then into small slices, and I cut the slices in half. I drained and rinsed a can of chickpeas. The last part of the salad that I had to prepare was the dressing. I whisked together sherry vinegar, dijon mustard, garlic, paprika, and oil. Once the wheat berries were cool, I threw everything together and tossed it in a bowl.
I really enjoyed this salad for a few reasons. The dressing was super simple and also delicious. It was easy to prepare everything. This salad was filling. I liked each of the flavors in the salad. The wheat berries had a great texture, the greens were fresh, the orange was sweet, and the dressing was slightly acidic. I think everything worked well and balanced out in the end!
