Vegetable Broth Base (Recipe #114)
I always need vegetable stock or vegetable broth. I typically make a broth by adding some liquid or powder bullion to boiling water. This is a recipe for homemade vegetable broth base. I was quite excited to try it on my own and it came together very quickly!
The recipe called for leeks, carrots, celery root, parsley, dried minced onion, salt, tomato paste, and soy sauce. Basically, I processed all of the ingredients together until it was as fine as it could be. It basically created a paste. After preparing the base, I put it into a container and placed it into the freezer. Whenever I need to use it, I scoop out 1 tablespoon of base for every 1 cup of water that I need.
I think this broth base does a great job of capturing all of the flavors of a vegetable broth. The only difference between a bullion and this broth base is that it does not completely dissolve in water. The recipe suggests that if you want a particle-free broth that you strain the broth through cheesecloth. I have kept the particles in the broth each time that I have used it. I don’t think that it was noticeable or changed the flavor. I liked being able to make this myself. I am going to keep this recipe moving forward, so I can always have homemade vegetable broth that has no extra additives or sugars.
