Vegan Apple Bread Pudding for Breakfast


Bread pudding is such a great idea all the time! I made this apple bread pudding on a cold morning for breakfast and it was just what I needed. A little bit of sweetness and it kept me full until lunch. It also made enough to save for the next few days for breakfast!

Using day-old bread is a necessity! If you do not use day-old bread, then the dish will turn out soggy. In regards to the apples, you can peel them or not (it is up to you!). I left the peel on mine and it turned out great!



Apple Bread Pudding for Breakfast

Ingredients:

  • 2 ripe bananas

  • 4 tbsp coconut oil

  • ¾ cup applesauce

  • 1 ½ cups almond milk

  • ½ cup brown sugar

  • 1 tsp cinnamon

  • ½ tsp vanilla extract

  • ½ tsp salt

  • ¼ tsp ground ginger

  • 7 cups day-old bread* cut into 1’’ pieces

  • ½ cup diced apples (small dice)

Directions:

  1. Preheat the oven to 350 degrees fahrenheit. Grease an 8’’x8’’ baking dish.

  2. Place bananas in a large bowl and mash. Add in the coconut oil. Microwave until the coconut oil is melted (about 30 seconds). Whisk together the banana and oil.

  3. Whisk in the applesauce, almond milk, brown sugar, cinnamon, vanilla, salt, and ginger.

  4. Fold in the bread and apples. Put into the prepared pan and let sit for at least 30 minutes (this can sit overnight--you will just need to increase the cooking time to ensure that it is warmed throughout).

  5. Bake until set-- about 30-40 minutes. Enjoy!


*Day-old sourdough is great for this!
