Turkish Tomato, Bulgar, and Bell Pepper Soup (Recipe #108)

I love soup, especially tomato soup, so I was excited to try this recipe. This soup tasted delicious! I loved all of the flavors and the combination of the different spices. I would definitely make this again!

This was a very easy soup to make and it did not have a lot of prep work to be done. I started by chopping onion and red bell peppers. I sauteed those in some oil in a dutch oven. I added garlic, mint, paprika, and red pepper flakes. After the spices became fragrant, I added in tomato paste and let that cook in the pot for one minute. Then, I added some dry white wine. I let this reduce and was sure to stir around the soup to get any of the brown bits off of the bottom. I stirred in vegetable broth, water, and bulgar. I brought it to a simmer, covered my pot, and let it go for about twenty minutes. That was all I had to do and the soup was done!

I loved the flavor of the onion, garlic, and mint. There was a hint of spice from the red pepper. There was also sweetness from the red bell peppers.I loved how this soup turned out and I will be making this again!
