Teriyaki Tofu (Recipe #119)

I feel like some people either love tofu or hate tofu. I say that you just need to give it a chance when it is cooked really well and you will like it. Tofu is so versatile! Tofu also has a handful of different textures to choose from, which can help accommodate everyone--like silken, firm, extra firm, etc.

This recipe from the Vegan for Everybody cookbook uses a simple teriyaki sauce and pours it over tofu that bakes in the oven. This was a very simple recipe that had a lot of flavor! I did notice that the tofu was better the following day--probably because it was able to soak up more of the teriyaki sauce!

The teriyaki sauce was made from water, soy sauce, sugar, mirin, garlic, ginger, and cornstarch. I simmered all of this on the stove and poured it over tofu slabs that I had prepared and put in a baking dish. It is important to note that the tofu is not drained in this recipe. I had never had a recipe explicitly state that the tofu is not drained, so I felt it was important to say. Once the tofu was done baking, I transferred it to a serving dish and sprinkled it with green onions. This was a really great main entree! I served this with some roasted vegetables. It did say to serve with rice--but, to be honest, I already had a bunch of rice this week, so I felt it was best just with some veggies. I can definitely see myself making this recipe again. I can also see myself using the recipe for the teriyaki sauce again. It was just so simple and packed with flavor!



Taste: 8/10--It was better the day after I made it.

Notes for next time: This was good, but I would have preferred smaller pieces of tofu rather than slabs of tofu.
