Stir-Fried Tofu, Shiitakes, and Green Beans (Recipe #118)

After a long day of work, I want to be able to put dinner together quickly without losing any flavor. This recipe for stir-fried tofu, shiitakes, and green beans is the most perfect weeknight dinner.

The recipe calls for a simple sauce of vegetable broth, soy sauce, rice vinegar, brown sugar, cornstarch, sesame oil, and red pepper flakes. I whisked all of the ingredients for the sauce together and set them to the side. I prepared drained tofu by covering it in cornstarch and frying it in a skillet until it was golden on all sides. While that was cooking, I prepared my other vegetables. I chopped the mushrooms, green beans, and scallions. I stirred together oil, garlic, ginger, and the white part of the scallions. When the tofu finished cooking, I removed the tofu from the pan onto a paper towel lined dish. I added the mushrooms and green beans to the pan. I wanted them to cook with the lid on and then brown them with off for a few minutes. I added the oil mixture to the center of the pan and stirred it into the mushroom and green bean mixture. I stirred in the tofu and sauce. I let the sauce thicken, which took only about a minute on the heat. I removed the stir-fry from the heat. I served the vegetables over rice, topped with green onion, and sesame seeds.

This incredible stir-fry was a very quick and easy dinner. It was filling and satisfying. I can see myself changing this recipe as needed for the vegetables on hand. For example, I can see myself cutting the green bean amount in half and adding broccoli. I can imagine this would be good with onions and bell peppers as well. I love stir-fried dishes in general because they are super easy and you can use whatever you want in them!
