Savory Drop Biscuits (Recipe #117)
I woke up this morning thinking that I needed biscuits in my life. I went straight to my Vegan for Everybody cookbook and America’s test Kitchen did not let me down. These were easy to put together, baked in about 14 minutes, and were just delicious. These were a beautiful treat for this morning!
This biscuit recipe called for only a handful of ingredients. I whisked together flour, sugar, salt, baking soda, and baking powder. In a separate bowl, I whisked together coconut oil that had been melted and cooled with coconut milk and lemon juice. I stirred the wet ingredients into the dry ingredients just until it came together. I greased a ⅓ cup measuring cup and scooped batter to drop onto a baking sheet that was lined with parchment (see what I did there? “Drop” onto a baking sheet and these are “drop” biscuits haha). I put them into the oven at 475 degrees fahrenheit for about 14 minutes. The tops became beautifully golden brown. The biscuits were the perfect texture!
These biscuits were delicious on their own as well as with some jelly on top! I added some apple jelly on my biscuits. Jacob enjoyed his biscuits with butter and grape jelly. We had apple slices on the side and it was a great breakfast!
