Apple Cake with Caramel Frosting
Apple cake may be my new favorite cake. I was so happy with these results and I will be making it again! I came across this recipe on the King Arthur Baking page and I wanted to make it vegan. I will share the original link down below. This recipe and directions have been modified by me!
Apple Cake with Caramel Frosting
Ingredients:
Cake
2 ⅓ cups flour
1 ⅔ cups sugar
2 tsp baking soda
¾ tsp salt
1 tsp cinnamon
¼ tsp ginger
⅛ tsp nutmeg
2 ripe bananas
8 tbsp coconut oil (room temperature)
4 cups diced apples (425g)*
1 cup diced walnuts
Frosting
7 tbsp coconut oil
⅔ cup brown sugar, packed
¼ tsp salt
¼ cup almond milk
1 1/2 cup confectioner’s sugar
¾ tsp vanilla extract
Directions:
Preheat the oven to 325 degrees Fahrenheit. Grease a 9’’x13’’ pan or two 8’’x8’’ pans.
To make the cake: Mix the flour, sugar, baking soda, salt, cinnamon, ginger, and nutmeg. Stir in the coconut oil until the mixture becomes crumbly. Stir in the bananas. Stir in the apples and walnuts until the mixture becomes a creamy batter. This will be in between a brownie batter and cookie dough. Spread the mixture into the pan(s). Wet your fingers and push down as necessary. I was able to use a spatula to smooth the top.
Bake the cake for about 40-45 minutes until a toothpick comes out clean. Remove the cake from the oven and let cool on a rack.
To make the frosting: Melt the coconut oil in a medium saucepan over medium heat. Stir in the brown sugar and salt and cook. Continue to stir the mixture until it begins to melt together. Keep stirring until bubbles start to come up on the edges of the pan. Remove from heat and whisk in the milk a tablespoon at a time. Whisk in the confectioners sugar and the vanilla extract until combined well. Pour the frosting onto the cake and spread it over the whole surface.
Serve warm or room temperature! Store the cake at room temperature for several days.
*I kept the peel on mine.
