Vegan Shish Kebabs

One of my favorite parts of the summer is using the grill. I love, love, love, grilled vegetables! While I was camping, I decided to make shish kebabs! Shish kebabs are a super easy meal and can be customized in a million different ways. I grabbed a bunch of veggies that I had, cut them up into similar sizes, and threw them on the grill. I did add a little bit of oil, salt, and pepper. For veggies, I used portobello mushrooms, onions, zucchini, bell peppers, and banana peppers.  I also did two skewers of just jalapenos! They were just delicious! 


Few tips:

  1. If you are using wood skewers, remember to soak them first!

  2. Play around with the seasonings! Use salt, pepper, garlic powder, cayenne, onion powder… the list is endless!

  3. Choose any veggies, but make sure to cut them in similar sizes so they cook evenly on the grill. Remember to rotate the skewers when they are about halfway cooked, so the food cooks evenly on all sides.
