Tofu Scramble with Tomato and Scallions (Recipe #90)
Since I have made a version similar to this one previously, I was already familiar with the recipe. I was happy how this version turned out and I would make a tofu scramble again.
As you can tell from my picture, I processed the tofu in a processor to get super small pieces. I know this does not mimic the texture of eggs, but I had some tofu left over from another recipe that I processed, so I decided to use it in this recipe. It was a very simple recipe that called for tofu, shallot, tomato, garlic, and scallions. I used salt, pepper, and turmeric as the spices. Basically, I sauteed the shallot, tomato, and garlic together. I added the tofu and spices to the pan to warm the tofu through. Lastly, I topped with scallions (I stirred a few in and garnished with the rest).
I love the flavor of eggs with tomato and onion. This recipe really nailed that combination with the shallot, tomato, and the green onions. I liked the combination of the tofu, tomato, spices, and fresh green onion garnish. I served this with a piece of toast with grape jelly and a warm hot tea!

Notes for next time: I would add some more seasoning--like onion powder or garlic powder.
