Super Greens Soup with Lemon-Tarragon Cream (Recipe #99)
It sounds scary. I mean really scary. Super greens? Swiss chard, kale, parsley, and spinach all in the same dish? It actually turned out pretty good! I was impressed and surprised!
This soup had two main parts to it--the soup and the cream to top it. The cream was simple. I needed to whisk together tarragon, lemon, sour cream, oil, and water together. The soup was not difficult, but it did call for a few ingredients. I had to start by caramelizing onions. Then, I added mushrooms, garlic, and cayenne. I added water, vegetable broth, and arborio rice (risotto rice). Lastly, I added the swiss chard, kale, and parsley. Off of the heat, I stirred in the spinach. Once everything was together, I put it in the blender in portions until it was smooth. I added it to a pot and seasoned it to taste.
This soup really reminded me of a broccoli cream soup. The texture was smooth. The cream was welcomed on top to add a little extra flavor and a bit more creaminess to the soup. Overall, the soup was not bad and I am glad that I tried it. I learned that I should not judge a recipe based on the picture!
