Spicy Gazpacho with Chipotle Chile and Lime (Recipe #81)
I am happy to say that I liked this version of the gazpacho better than the classic gazpacho! I think the little bit of chipotle and the little bit of lime helped to add an additional level of flavor. This would have been the perfect side to a chickpea salad sandwich on a hot summer day with a glass of iced tea. I can literally picture myself sitting in the sun under an umbrella eating this lunch!
This gazpacho used the classic gazpacho recipe--tomatoes, bell peppers, cucumbers, onion, sherry vinegar, garlic, and tomato juice. This recipe additionally called for cilantro, canned chipotle in adobo sauce,lime zest, and lime juice. This soup is very easy--like chop up the veggies and let it sit in the fridge!
I mentioned this with the last gazpacho and I think it holds true with this version as well. I pureed the soup in a blender to make it smooth. I am very glad I did this! I topped this version with crushed up tortilla chips. Croutons would also be great on the top! I think the tortilla chips were fitting the chipotle and lime vibe. I would make this again on a hot summer day to avoid turning on the stove!
