Socca with Swiss Chard, Pistachios, and Apricots (Recipe #96)
I was surprisingly pleased with the results of this dish! Socca is like a flatbread/crepe that is topped with swiss chard, pistachios, and apricots. This dish is found in the snacks and apps section of the vegan for everybody cookbook, but I decided to make them for dinner one night for Jacob and I. I liked having this as a full dinner. I enjoyed two crepes by myself and Jacob had three. I thought it was a filling meal!
Socca is basically like a crepe made from chickpea flour, salt, pepper, turmeric, and water. Everything is combined then it is added to a skillet to brown on both sides. The topping consisted of onion, garlic, cumin, salt, pepper, allspice, swiss chard, dried apricots, pistachios, and white wine vinegar.
Jacob and I were both pleased and surprised at how good this dish tasted. I really loved the addition of the dried apricots in the topping. Swiss chard is naturally a little bitter, so having the sweetness balance the bitter flavor really helped the topping come together. The pistachios were also a really nice touch to add some nuttiness to compliment the batter.

Notes for next time: Since I used a 10’’ pan for the crepes, next time I would use a smaller pan to get the socca smaller and thicker like the recipe suggests.
