Lemon-Glazed Ginger Scones (Recipe #77)

        I was awed by the currant scone recipe, so I knew the lemon-glazed ginger scones were going to be good. I did not expect them to be as good as they were! I loved baked goods for breakfast (for really anytime) and these scones were the perfect way to wake up. I paired one of these scones with an apple or banana and tea to make my morning just perfect.

The scone recipe is really easy to put together. This recipe modified the currant scone recipe slightly. These scones called for crystallized ginger instead of currants. The glaze is made from powdered sugar, lemon zest, and lemon juice. After the scones come out of the oven, I let them cool before putting the glaze on them. I let the glaze sit for about 10 minutes before scoping one up! I did let them sit on the counter a little longer to be sure that they would not stick to one another when I put them in containers.

I shared these scones with my mom and grandma. They had nothing but good things to say! I love sharing with other people. That may be one of the best parts of cooking. I drop off some food, get the feedback, and (hopefully) improve the next time that I make it. I was glad to hear that both my mom and my grandma told me to star this recipe as one of my favorites--because I already did! I am looking forward to the last version of the scones...maple-glazed pecan.... I can smell and taste it now!
