Classic Gazpacho (Recipe #76)
Gazpacho is the perfect summer lunch. Using fresh tomatoes, cucumber, bell pepper, and sweet onion, this dish represents beautiful summer produce. I liked the gazpacho served for lunch with a half of a sandwich. I decided to puree my gazpacho to have a smoother texture. I did not like the chunks of the vegetables. I thought the texture was okay, but I liked the smooth texture better. I think this type of soup is meant to be served in a cup with something else to eat.
There is another version of teh gazpacho in this cookbook and I am interested to see how changing a little bit of the flavor will make the cold soup turn out. The other recipe calls for the addition of cilantro, lime zest, lime juice, and canned chipotle in adobo sauce. I will have to make another post about this version!

Level of difficulty: 1/5--Literally so easy
Notes for next time: I liked the smooth gazpacho better.
