Checking in with myself:

Today is a very exciting day for me! I just made a post about trying my 100th recipe from the Vegan for Everybody cookbook! I cannot believe that I have completed 100 recipes and I have 72 recipes left to go! My journey is just beginning and I know that. I have so much left to learn, so much food I want to cook, and so much food I want to eat. Everyday, I look forward to what I am cooking and what I am going to be eating. It has filled my life with so much joy to know that I am eating good food. 

Challenging myself to making every recipe in one cookbook has been one of the best things that I could have done to help my personal development. Before starting a blog and embarking on this challenge, I noticed that I was like there was more to life than what I was living. After having done 100 recipes, I have noticed how much more fulfilled I feel! I use time in the kitchen as my destress time. I give myself room to enjoy and even room to make mistakes. I have made recipes and not liked how they have turned out. Even in the moments where I have not liked something, I have learned a valuable lesson every single time.

I spent a lot of time today reflecting. My biggest takeaway is that, for me, food is happiness. I have such a special and deep relationship with food (yes, that may sound silly, but that’s okay). I love how food makes people happy and brings people together. I was recently watching a cooking show and at one point there was a quote that said, “if you want to learn how to be happy, learn how to cook.” This has resonated with me ever since I heard it. It is so true! We eat at least three meals a day--breakfast, lunch, and dinner. Why not enjoy every meal that you are eating? With every meal, you can bring yourself a little bite of happiness. With that being said, food has always made me happy and food has always had a special place in my heart.
