Buffalo Cauliflower Bites (Recipe #103)
Buffalo cauliflower bites seem like a no brainer and I am here to tell you that this might be the best thing you have ever eaten! This recipe takes cauliflower and transforms it into a “boneless wing” of sorts. The perfect crispy texture with the perfect spicy sauce and ranch makes this the most amazing appetizer (or dinner if you want).
I started by making the buffalo sauce. It was simply a mixture of coconut oil, hot sauce, brown sugar, and cider vinegar. I, then, moved on to preparing my cauliflower. I cored the cauliflower head and broke off florets into about 1.5’’ pieces. I made sure to make the florets as even in size as possible--I had to cut a few florets in half. I wanted them all to be the same size so that they could cook evenly. I rinsed them and let them dry. I tossed them into a bowl with coconut milk and hot sauce. I added a cornstarch/cornmeal mixture with salt to the cauliflower and tossed to combine. I worked with a few pieces at a time adding them to a pan with about an inch of hot oil. After they came out of the oil, I put them on a paper towel lined plate. Once all of the cauliflower was fried, I tossed the cauliflower with most of the buffalo sauce that I prepared. I plated the cauliflower with a bowl of the extra buffalo sauce and some ranch.
These bites of cauliflower were really amazing. Jacob was so impressed by them! He even rated them an 11/10 saying that they were one of the best things that I have ever made. I was so happy to hear him say that he liked this! I thought they were just as delicious and, for me, they could replace boneless wings all together. When I have a craving for wings, I am going to turn to these! I recommend these to anyone who like cauliflower, wings, or spicy food!
I think this would also be the perfect recipe to change up the sauce. I can see myself making barbeque ones or even a honey mustard version. I would love to make a few batches of the cauliflower and pair that with a bunch of sauce for people to pick their own!
