Almond Milk (Recipe #85)
Plant based “milk” beverages are an incredible thing! Growing up, whenever I would drink a lot of milk, my stomach would hurt after. When I discovered almond milk, I made the switch instantly. I have tried oat milk, rice milk, and soy milk. I love all plant based milks! I think it is a great alternative to cow milk.
In the Vegan for Everybody cookbook, there is a recipe for almond milk. It was a lot more simple than I thought! I soaked the raw almond overnight. I put them in a blender with water and I strained them through cheesecloth. I stirred in a small amount of sugar and salt. The almond milk was done!
I was very intrigued how much more this milk tasted like the actual almond. I really enjoyed the process and the taste of this milk. I would love to switch completely over to making my own milk at home! I am sure one day that I will be making everything from scratch! Right now, I would like to make it when I can, but I am not opposed to buying plant based milk beverages at the store.

Notes for next time: I would love to blend a date in rather than use sugar to add more natural sweetness.
