Vegan Parmesan Substitute (Recipe #45)
I would never think that raw cashews, nutritional yeast, raw pine nuts, green olives, and salt would come together to make a cheese substitute. I was totally thrown off guard when I saw the recipe call for green olives. Anyway, this “cheese” came together shockingly well! The texture was close to that of parmesan. It was a little harder than cheese, but it was close. The taste was surprisingly so close!
I made this to top off vegan mac and cheese. I am so glad I did! This extra little bit of cheese on top accomplished two things. It helped give the dish a bit more flavor and it helped make it feel like it was real mac and cheese. I am glad I tried this recipe and I am going to keep it for sure!
Taste: 10/10--crazy how much it tasted like parmesan!
