Spicy Peanut Rice Noodle Bowl (Recipe #43)
One thing that I love about cooking is how it can take you around the world without ever leaving your kitchen. This Southeast Asian inspired spicy peanut rice noodle bowl took me to Asia. This bowl consists of rice noodles topped with a peanut sauce, carrots, edamame, cabbage, and peanuts!
This bowl was full of different flavors and textures, which helped to make each bite interesting. The carrots were mixed with rice vinegar and sat until the rest of the dish was made. The rice noodles were placed in boiling water for 7 minutes (I followed the instructions on the packing for the noodles). The edamame was browned in a skillet. Lastly, the noodles were placed in a skillet to be cooked with a small amount of water and curried peanut sauce. After the sauce thickened in just a couple minutes, the noodles were ready to be served.
Jacob and I each topped our own bowls with the amounts of ingredients we wanted. We both started with some noodles, added some of the carrots, edamame, and cabbage. We added some extra peanut sauce, chopped peanuts, and torn basil. We also decided to add just a little bit of sriracha on top (or a lot of sriracha in Jacob’s case as he loves it!).
It turned out to be a very filling and satisfying lunch. I love the meals where you walk away, not only full, but satisfied too. I feel this is important because in my experience if I am not satisfied then I tend to snack on other food in between meals. I really enjoyed this bowl and would love to make it again!
