Sesame Soba Noodles with Snow Peas, Radishes, and Cilantro (Recipe #60)
Wow! I made these vegan soba noodles for dinner and I can not stop thinking about them. I have never had soba noodles before and it turns out that I really like them! These soba noodles were topped with an Asian inspired sauce and covered in veggies. I recommend this dish for anyone looking for a quick weeknight dinner, a meatless option, or something delicious!
This recipe was very easy to put together. I started by putting water on the stove to boil. While that was coming to a boil, I put together the sauce. Soy sauce, peanut butter, sesame seeds, rice vinegar, brown sugar, ginger, garlic, and hot sauce were processed together to make a great sauce. I did add about a tablespoon of water to loosen it slightly. I also chopped my veggies. I thinly sliced radishes, halved snow peas, and chopped a stalk of celery. I also did mince the cilantro, but the recipe did not call for it. I wanted to have cilantro bites all the way through the dish. Finally, when the water came to boil, I put in the soba noodles for about 5 minutes (according to package directions to make al dente noodles). I drained them and rinsed them with cool water. I tossed the noodles with sesame seed oil, tossed in the vegetables, and mixed in the sauce. Dinner was ready to be served!
This dish was a winner for a few reasons. The soba noodles were very satisfying. After eating, I was full and satisfied. The peanut sauce was just amazing. It had the perfect level of spiciness and flavor. The raw vegetables worked really well in this dish. The cilantro added an additional (surprisingly great) flavor of freshness! Jacob and I decided to top our individual bowls with sriracha. We love sriracha! I did enjoy this additional splash of heat on the noodles, but if you do not like heat, I would not recommend adding it.
There are certain foods and flavors that Jacob and I really enjoy. We have found that we love peanut sauce--I mean we love peanut butter, so it is kind of a given. I think the savory, sweet, and spicy combination really comes through in a good peanut sauce. We also really enjoy Asian inspired dishes (if we could order Chinese take-out everyday, we probably would haha!) I have really been enjoying how this cookbook has so much to offer! The different vegetables, flavors, and inspirations really make it a great cookbook!
