Quinoa and Vegetable Stew (Recipe #61)

        I love soup! I mean on a cold day, if you aren’t feeling well, or just because, soup is such a great option. I like to make a pot of soup a week because it is easy and a quick lunch. I made the quinoa and vegetable stew from the Vegan for Everybody cookbook. It was delicious!

I loved how quinoa was the star of the dish. It made this vegetable stew very hearty, so it was filling. I liked the assortment of vegetables that were used--onion, red pepper, potatoes, corn, and peas. I also really enjoyed the variety of spices. Paprika, coriander, and cumin were all used in this dish. I think each of the spices played an important role in rounding out the flavor of this beautiful stew. The introduction to the recipe states that the garnishes, cilantro and avocado, are imperative to the flavor of the stew. I do agree with this and would not recommend omitting these two ingredients. The cilantro added a freshness to the dish. The avocado added additional texture, which was nice against the quinoa and cooked veggies.

I did make a piece of garlic bread to go with this (I love bread with soup--like they belong together!). I think this stew was a filling and delicious lunch. This recipe made enough for six servings. I love when a soup makes about six servings because it gives Jacob and I each two meals. I, then, can bring some soup to my mom and my grandma. My grandma is a soup nut, so if she hears I made a soup and did not bring her any… she is not happy. I love sharing my cooking with other people. I love sharing good food with other people. Food has a special way of bringing everybody together.
