Grilled Portobello Burgers (Recipe #54)
I love a good coffee cake. There is nothing better than having a piece with dessert or early in the morning with a steaming cup of coffee (or tea!). This vegan coffee cake from the Vegan for Everybody cookbook produced a moist and delicious cake.
This cake has two parts to it--a streusel topping and the cake part. The streusel topping called for pecans (I used walnuts), brown sugar, flour, cinnamon, salt, coconut oil, and water. The cake portion called for flour, sugar, whole-wheat flour, cinnamon, baking powder, baking soda, salt, coconut oil, almond milk, lemon juice, and vanilla. I, first, blended the streusel portion in a food processor and set it to the side. In a clean food processor, I pulsed together the cake portion. It was an easy recipe and turned out delicious!
I would like to remake this recipe and re-try the streusel portion (the topping). I think it turned out well, but it was not like the traditional crumb topping. The photo in the cookbook showed this beautiful crumb, but mine did not turn out that way. I think either I did not let the coconut oil cool enough or maybe I did not use enough of it. I am always critiquing what I make in order to learn and improve!
