Currant Scones (Recipe #58)

        Baking is beautiful for a few reasons. My favorite thing about baking is how it just fills up my house with the smell of whatever is in the oven. It is the smell of sweetness and sugar! These scones filled my house with a beautiful smell. A beautiful smell means a beautiful taste, right?! In this case, yes! These scones were delicious!

These scones were very easy to put together. I was able to process most of the ingredients in the food processor. I then stirred in the liquid ingredients until a dough formed. I kneaded the dough for about a minute. I made a flat circle out of the dough and cut out 8 uniform scone pieces. I put them in the oven to bake and waited patiently for the results!

The scones came out perfect. They were the perfect size to have one scone and a piece of fruit for a delicious breakfast (or two scones or three--I don’t judge!). The texture was perfect. The coconut oil helped to create a buttery-like texture throughout the scone. I really enjoyed the currants in the scone because they added a touch of sweetness and bright flavor. I never had dried currants before making these scones. I really enjoyed these and I am looking forward to making the other two versions!

Taste: 10/10--I might be in love with coconut oil!

Notes for next time: There are two additional scone recipes in this book--lemon glazed ginger and maple glazed pecan. I am super excited to try the other recipes after how good this one was!
