Crispy Onions (Recipe #71)
I am a big fan of onion rings or crispy onions on a burger! I made these crispy onions to top my pinto bean-beet burgers and they were a great addition. These were very easy to get together and were worth making.
I started by thinly slicing a whole onion to get rings. I separated the rings and placed them in a bowl to cover with distilled vinegar. In a different bowl, I put together the breading, which consisted of flour, salt, pepper, and cream of tartar. I drained the rings and started covering each of them in the batter. I deep fried the onions in a pot of oil for about 5 minutes until they were nice and crispy. I took them out of the oil and placed them on a paper towel lined plate. I salted them while they were still hot (salt and pepper to taste).
I may have eaten one or two as soon as they came out of the pot…. Or a handful, but who's counting anyway?! They were very delicious! I did think that a lot of the coating came off into the oil. I expected some to fall off, but the rings ended up being very lightly coated. These were super delicious and I can see myself making them again for a burger topping or even for an appetizer!
Taste: 9/10--too much of the breading fell off, so I had to bring it down to a 9.

Notes for next time: I would make these again!
