Creamy Cashew Mac and Cheese (Recipe #46)

Mac and cheese is such a comfort food! I was very excited to see this recipe in a vegan cookbook. I would never have thought that cashews and cauliflower would come together to make a cheese sauce! I enjoyed this recipe.

This recipe creates a “cheese” sauce out of nutritional yeast, dried mustard, tomato paste, garlic, salt, turmeric, almond milk, cauliflower, and cashews. It cooks together and then is pureed in a blender. This is thrown on top of pasta and it is done! I was very surprised at how easy the recipe was. I really enjoyed this dish. It was not 100% perfect macaroni and cheese, but it was really close. It had the right texture and flavor. I put some of my vegan parmesan on top of it and it gave it an extra hint of mac and cheese!

I love being able to try new food and recipes in this cookbook. I would never have thought to combine cashews and cauliflower to create a cheese sauce to put on top of pasta. I love learning the new processes too. I love all of the time that I spend in the kitchen. I could cook all day, every day! After all, who doesn’t love eating good food?!



Taste: 9/10--Almost mac and cheese perfect

Notes for next time: I would be interested in trying a spin off of this recipe like with broccoli.
