Classic Pancakes (Recipe #53)
Pancakes are such a classy breakfast. Pancakes also work very well when doing breakfast for dinner. This classic pancake recipe created, just as the name goes, a very classic pancake. I enjoyed these pancakes so much! They were also very easy to make!
Of course, you cannot have a pancake without maple syrup! I may be a little maple syrup crazy, so I like to put a lot (so much!) on my pancakes. Since this recipe did not call to put fruit in the pancakes, I had some fruit on the side. I cut up some strawberries, bananas, and apples. Next time that I make this recipe, I would like to make it with fruit or chocolate chips inside the pancakes. Just writing about these pancakes I am getting very excited about eating them again!
One thing that I am beginning to notice about this cookbook (Vegan for Everybody cookbook by America’s Test Kitchen) is that the recipes are easy to make. I have had a difficult time finding some of the ingredients, but the recipes themselves have been very easy to put together. Pancakes are easy to make to begin with, so I was hoping that the vegan version would not be any more difficult and they were not. The recipe called for all of the classic pancakes ingredients--flour, sugar, baking powder, baking soda, and salt. A couple of the ingredients that differed from a non-vegan recipe would be that it called for ground flax seed, almond milk, and lemon juice (those are not difficult to find). Overall, I recommend this recipe and I will be making it again.
Taste: 10/10--like who doesn’t love a good pancake recipe?!

Notes for next time: I will be adding fruit or vegan chocolate chips in them next time! Yum!
