Baked Smoky Potato Wedges

        Recently, I have been craving potato wedges. I don’t know why I was specifically craving wedges, but I was, so I needed to have them. I happened to be on instagram looking at different vegan accounts when I came across this recipe! There is just something about crispy wedges, soft on the inside, covered with amazing spices and dipped in ketchup. Just something that says comfort--kind of like a hug!

This recipe is easy and used an amazing spice blend! I started by washing my potatoes and cutting them into wedges. I placed the wedges in a large bowl. I covered them with oil and spices. I put the lid on the bowl and shook it around until all the potatoes were covered. I placed them on a parchment lined baking sheet and in the oven they went! Baked Smoky Potato Wedges

Ingredients:

  • 2 lbs russet potatoes, skin on, washed, patted dry, cut into wedges

  • 1 tsp salt

  • ½ tsp cayenne pepper

  • 1 tsp garlic powder

  • 1 tbsp paprika

  • ½ tbsp dried italian seasoning*

  • 1 ½ tbsp olive oil

Directions:

  1. Preheat the oven to 375 degrees and line a baking sheet with parchment paper (or silicone baking mat).

  2. Slice the potatoes in half and then into wedges. (Each half produced 4 wedges so about 8 wedges per potato.) Place in a large bowl with oil and seasonings. Toss well!

  3. Individually place them on the baking sheet. Leave room between each wedge to allow them to crisp.

  4. Bake for 1 hour** or until tender with the touch of a fork! Enjoy!


*I did not have italian seasoning so I did about a ¼ tbsp oregano and ¼ tbsp basil. I think it still worked great!

**The recipe states 30 minutes, but I found that it took closer to one hour.

Notes for next time: I needed at least 1 hour in the oven!
