Vegan Mayonnaise (Recipe #8)
Let’s talk about Mayonnaise--AKA America’s #1 condiment!
The Vegan Mayonnaise recipe in the America’s Test Kitchen Vegan for Everybody cookbook is a keeper! This had a beautiful flavor and texture.
I was quite surprised when I read the recipe and saw that it used aquafaba and a lot of oil, but I am not sure what I expected because I knew I was making mayo. It also called for Dijon mustard, lemon juice, and salt. The recipe calls for starting the mixture in the food processor. After about three minutes, you move the mixture to a bowl to whisk in the final amount of oil. I think it would be easier to keep it in the food processor the whole time. I am going to try this variation next time to see if it works just as well.
Taste: 10/10--Great substitute for mayo!
Level of difficulty: 2/5--It called for non-stop whisking once removed from the food processor.
Notes for next time: I think this would help with thickness to keep the mixture in the food processor the whole time.
