Overnight Three-Grain Breakfast Porridge (Recipe #5)
I love making “overnight” breakfast foods because it helps to make your morning so much easier! The overnight three-grain breakfast porridge is an easy recipe that only takes about 10 minutes to prepare in the morning--everything else is done the night before!
I did end up making two substitutions regarding this recipe. The three grains consist of millet, white quinoa, and amaranth. I was able to find white quinoa at Wegmans and amaranth at Whole Foods, but I could not find millet. Whole foods had a mixture of millet with ramen noodles, but I feel that would have not been a good substitute. I looked online and there was a list of grains that could work as a replacement for millet. One of those replacements is bulgar--I found this at Whole Foods! I am interested to try this again to see the different texture that millet has versus bulgar to be able to determine if this was a good substitute. I also substituted the blueberries the recipe calls for with strawberries because I had them on hand. The blueberries were to bring a fresh sweetness to the bowl, which I think strawberries are equally capable of doing.
I would like to note that this recipe uses two cups of oat milk. I decided to make oat milk at home instead of buying it (1) to try homemade oat milk and (2) to see if it would work in this recipe. I tried it after I made the oat milk and I thought it was very good! I would like to buy oat milk to compare the two to see how well I did or what changes I could make. Making oat milk was very simple!
I noticed that the recipe claimed to make four servings. During the week, I enjoy a smaller breakfast that can get me started for the day. I only took a small portion of this porridge, so I think this could even serve six.
Taste: 8/10--I enjoyed the sweetness of this filling breakfast. It does have an interesting texture from the grains, but was also creamy--something to think about.
