Korean Barbecue Tempeh Wraps (Recipe #16)
Crispy tempeh with a sweet, savory barbeque sauce put together into a flour tortilla is enough to keep you wanting more! This recipe from Vegan for Everybody was inspired by the boldness of Korean barbecue. Pairing the bold sauce with fresh ingredients, like baby bok choy and radishes, helps to keep the dish light and filling.
I enjoyed the combination of flavors of this wrap. The soft shell, the crunch from the fresh veggies inside, and the meaty texture of the tempeh came together very well. I added carrots and cucumbers to my wrap that was not called for in the recipe for additional crunch in the wrap. I used a mandoline for my fresh veggies to keep the slices of radishes, cucumber, and carrots even and thin.
I have not decided if I like tempeh. It has an interesting texture that is almost meaty, but it breaks down into small pieces when bitten into. The barbecue sauce helped to add flavor to the tempeh. I think the wrap overall had a nice texture and taste. I would like to continue to cook with tempeh to begin to understand what this product has to offer.
Taste: 8/10--This was not my favorite dish that I have made, but I would make it again!
Level of difficulty: 1/5
Notes for next time: I liked adding the carrots and cucumber to the wraps!
