Hummus with Smoked Paprika (Recipe #22)
Hummus and fresh veggies is one of my favorite snacks! I love pairing hummus with carrots and broccoli. I was very excited to try a homemade version because I have only ever bought hummus. After making my own, I might never go back to the store bought version!
This hummus recipe was very simple. It calls for chickpeas, tahini, garlic, lemon juice, oil, and spices. I used the food processor to process all of the ingredients and the texture came out exactly like a store bought hummus. After it came together, I put it in a bowl and let it rest at room temperature. I decided not to top it with pine nuts like the recipe suggests because the store I went to did not have them. I did drizzle extra virgin olive oil on top of the hummus and sprinkled some scallions on it!
I plan on having this as a snack throughout the next few days. I find it better to prepare for snacks because then I do not find myself snacking on anything that I should not be. I know that I will want a snack in between lunch and dinner or sometimes after dinner. I like to know that I have the option of a healthy snack always within reach!
I like having control over what goes into the food I am making. This recipe is a great starter and it can easily be changed. I would love to try roasting garlic and putting that in the hummus. I would also like to try a roasted red pepper version. I think it would be interesting to try a dessert version! I bought a peanut butter and chocolate hummus that had neither chocolate nor peanuts--it was great with strawberries! The dessert hummus helped my sweet tooth while still being a healthy option. I am going to think about making that!

Notes for next time: I would like to try with some peppers or pita chips! I would love to try a roasted garlic version or a roasted red pepper version!
