Creamy Curried Cauliflower Soup (Recipe #25)

        I know a soup is good when my husband wants more! Jacob is very picky about soups. He likes cream based soups, does not like a lot of vegetables in a soup, and there must be croutons. I made America's Test Kitchen creamy curried cauliflower soup for us and it was delicious! It called for only a handful of ingredients and it was easy to make.

This soup calls for cauliflower to be simmered in water and blended together. Adding a small amount of coconut milk, lime juice, and salt to taste rounded out the beautiful flavor of the cauliflower. The soup is topped with pan fried cauliflower, scallions, and extra virgin olive oil. The soup had a nice texture--very creamy!

I enjoyed using curry and ginger in this recipe. In the past few years, I started adding using curry and incorporating fresh ginger when called for into recipes. Curry and ginger have incredible flavors! I liked the depth of flavor in this soup and will be making it again.
