Creamy Breakfast Grits with Chives (Recipe #19)

        I like to start my morning off with a breakfast that keeps me full until lunch time. Grits do just that! This recipe uses sauteed onion as a base to give these grits a savory flavor. I have never had grits before today, so I did not know what to expect. I am satisfied with how this recipe turned out and I think I will keep this as part of my normal breakfasts. These grits came out creamy with the use of almond milk and savory. I felt like it was the perfect combination. I topped it with chives and with every bite there was a bit of freshness.

One thing that I have been really enjoying since starting to cook from the Vegan for Everybody cookbook is that I am trying vegetables and grains that I have never had before. Today, I tried grits for the first time. The other day, I used baby bok choy raw in a wrap, which I have never done before. A few times, I have worked with aquafaba, which I would normally dump down the drain! This cookbook is taking me outside of my comfort zone in the best way possible!
