Creamless Creamy Tomato Soup (Recipe #14)
Tomato soup is one of my all time favorite comfort foods. There may have been a period of time in my life where I lived off of Campbell’s tomato soup. I am proud to say I have moved past that and have embarked on making my own tomato soup!
America’s Test Kitchen creamless creamy tomato soup delivers in every aspect. It is perfectly creamy--without any cream or milks. I was afraid the soup was going to taste like biting into a raw tomato, which wouldn’t have been the worst thing, but it also would not have been what I was looking for. Adding enough salt and pepper to taste is key to highlight the beautiful tomato flavor without it becoming too powerful. I topped this with chives as the recipe calls. I also added some quickly homemade croutons. I loved the addition of the croutons!
This soup really warms the heart and soul! I am going to keep this recipe in my back pocket for those long weeks, long days, or moments where I need some comfort. Another perk about this recipe was that it was very easy to make. It did not take long to cook at all. This is the type of soup that fits well for busy evenings or when you are super hungry and need to get something onto the dinner table. This is a keeper!

Notes for next time: Add homemade croutons to the top!
