Chocolate Chip Cookies (Recipe #21)

        “Treat yourself” is a sweet little expression that a friend of mine taught me a few years ago. This expression has helped to add some fun into my life by stepping back and enjoying something. Today, I treated myself with the most delicious chocolate chip cookies from the Vegan for Everybody cookbook! This will become my go to chocolate chip cookie recipe!

This recipe calls for flour, baking powder, baking soda, brown sugar, coconut oil, creamy almond butter, vanilla, and chocolate chips. I was surprised when I read the introduction to this recipe that it omitted the eggs from a traditional recipe and did not replace it with anything. The introduction also explained that they chose to use only brown sugar rather than a mix of white sugar and brown sugar because it provided a deeper flavor.

I did make one small substitution. This recipe calls for smooth unsalted almond butter, but I used chunky almond butter. I don’t think this had any influence on the cookie itself and I would keep this change going forward!

This cookie was soft, had crunch around the edges, and left you wanting more. Shouldn’t all good cookies leave you wanting more? I think so! This chocolate chip cookie recipe really delivered and I am glad I decided to treat myself this weekend with them!

Notes for next time: Beautiful cookie! I would like to try doubling the amount of cookies with the same dough to have smaller cookies.
