Cauliflower Salad with Chermoula and Carrots (Recipe #20)
Roasted cauliflower and onion come together with raisins, carrots, and almonds to make this cauliflower salad. It is topped with chermoula--a sauce made of oil, cilantro, lemon juice, garlic, and spices. The recipe states it can be served warm or at room temperature.
Cauliflower is my favorite vegetable, so I was very excited to put this recipe together. However, it did not meet my expectations. I liked the recipe, but I did not love it. The chermoula was an interesting choice to choose to top roasted cauliflower. I thought a creamy dressing would work better. I feel like there was room for improvement!
The recipe calls for half a red onion, but I decided to use the whole onion instead. I did choose the smallest red onion I had. I am glad that I used the whole onion because I liked the flavor that it did add to the dish after being roasted. Other than that small change, I followed the recipe!

Notes for next time: I liked this salad, but I did not love it. I probably will not make it again.
