Black Bean Burgers (Recipe #10)

        Burgers are an essential. Making a black bean burger that is filling, holds its shape, and has a nice texture is a goal. This recipe checks every box for a great burger!

These black bean burgers consist of black beans (must reserve some bean liquid), flour, scallions, cilantro, garlic, cumin, hot sauce, coriander, salt, pepper, and tortilla chips. Instead of using eggs, a common wet binder, this recipe uses the black bean liquid to keep the mixture together. The tortilla chips act as a dry binder. The combination of all these ingredients creates a burger that holds its shape, becomes crispy when fried, and has a nice texture--the black beans are pulsed a handful of times in the food processor to allow for big and small pieces of bean.

The Vegan for Everybody cookbook has a list of ideas for toppings and sauces. The ideas include a creamy chipotle sauce, pur-style burger sauce, tahini sauce, quick pickled radishes, quick sweet and spicy pickled red onions, and crispy onions. There is a black bean burger on the front of the cookbook featuring the crispy onions, pickled radishes, and pub-style sauce. I was inspired by this picture, so I made the pub-style burger sauce and the quick pickled radishes.

I have made black bean burgers and lentil burgers before this time and each of the recipes I had led to a burger that fell apart in the pan or while trying to eat it--one of Jacob’s biggest complaints. I am happy to note that this burger kept its shape the whole time through the cooking process. See the before, during, and after pictures!
