Banana Bread (Recipe #23)
Banana bread is the perfect morning treat! It is one of those things that makes me look forward to getting out of bed. Nothing like a sweet and filling bread to start your morning!
I really enjoyed this recipe for banana bread from the Vegan for Everybody cookbook. I have made banana bread multiple times in the past and have even made a few vegan versions. One thing that I noticed was that this bread did not have an egg substitute like other recipes I have used. There were ones that called for applesauce! This recipe was simple in only calling for flour, sugar, baking soda, salt, walnuts, bananas, oil, almond milk yogurt, lemon juice, and vanilla. The introduction to the recipe explains how it is important to use ripe, but still firm bananas in this recipe. Next time I make this recipe, I would like to try with very ripe bananas to see if I can taste a deeper banana flavor.
I really enjoyed this bread, but it felt more like a tasty bread with nuts, rather than a banana bread. This also may be because I love bananas and banana bread so I was expecting a stronger banana flavor. I enjoyed the flavor of the walnuts in the bread, but I might add chocolate chips to the next batch!

Notes for next time: Watch the time in the oven and use very ripe bananas!
