Baja-Style Cauliflower Tacos (Recipe #37)
There are a few things that you can count on being great and two of these things are cauliflower and tacos. Putting them together must make the perfect combination! This recipe proves that they do indeed make the perfect combination!
The idea of this recipe came from trying to recreate a california style fish taco. The introduction to the recipe explains how the creators of the recipe wanted to capture the “Baja California experience.” Using battered cauliflower, a cool and creamy dressing paired with a sweet coleslaw was stated to capture the feelings of the California sun, wind, and fresh air.
The cauliflower was dunked into coconut milk (with spices) and then coated with a mixture of breadcrumb and shredded coconut. After I put the battered cauliflower in the oven, I started working on the coleslaw. I used a prepared coleslaw mix. Into the mix, I added mango, jalapeno, lime juice, and salt. I let that rest in the fridge for the remainder of the cooking time of the cauliflower. Then, I prepared the cilantro sauce (there is another post about this sauce!). Once the cauliflower was ready, I layered flour tortillas with the slaw, cauliflower, and cilantro sauce. They came together perfectly! I decided to add just a little bit of extra freshness and spice! I added some diced jalapenos and sliced radishes to my tacos. I really liked these two additions!
Taco night is one of my favorite nights! I love the idea of family style meals so you can serve yourself with the amount of toppings and such that you want. The personalization of family style meals just calls to me. Jacob and I like similar food, but I chose to put more slaw on my tacos where he would prefer to make a couple extra tacos. These tacos were sweet, fresh, spicy, and tasty! I love taco night!
